What You Need:

Pan Seared Scallops for "TapasTuesday on Too Into It!

  • 2 teaspoons olive oil

  • 1 pound raw scallops
  • 4 tablespoons butter
  • 2 anchovy fillets, drained
  • 2 cloves minced garlic
  • salt and lemon pepper
  • 1 lemon, juiced
  • 1 tablespoon chopped chives

What You Do:

  1. Heat oil in a large skillet on high heat and brown scallops on both sides. Remove from skillet and set aside, keep warm.
  2. Reduce heat to medium and add garlic, butter, and anchovies. Stir until garlic is browned and add scallops back into the skillet and cook all the way through.
  3. Serve in juices with chives sprinkled on top.
