#Tapas Tuesday // Saffron Calamari Rings
What You Need
1/2 pound calamari rings
4 cloves garlic, minced
pinch saffron threads (soaked in 1 tablespoon warm water)
2 tablespoons olive oil
2 tablespoons bourbon
4 cups baby spinach
lemon juice (to taste)
salt and pepper (to taste)
What You Do
Toss calamari in lemon juice and garlic
Heat oil in skillet over medium heat and cook calamari until lightly browned and remove from pan.
Add bourbon to the same skillet until almost evaporated (30 - 60 seconds), then add spinach and saffron (with water).
Once spinach leaves are wilted, mix in calamari.
Top with lemon juice, salt and pepper, and serve immediately.
