Today I have a really fun recipe for something I have been making my friends and family for years. It is so simple and so delicious, and honestly a much healthier alternative to french fries. If you like this recipe, get creative with it! You can follow this same basic outline for all sorts of different flavors, by using different fresh herbs, spices, and cheeses. Try and combine fresh basil and feta, or oregano and mozzarella, or even cilantro, cayenne, and queso fresco! Enjoy!
What You Need:
10 red potatoes
1/4 cup fresh rosemary
1/4 cup shredded parmesan
coarse sea salt
freshly ground black pepper
What You Do:
Cut the red potatoes in half lengthwise, and then cut those halves in half.
Place potatoes in a medium size bowl, toss with about a tablespoon coconut oil, half of the parmesan, half of the rosemary, salt & pepper.
Bake at 350 degrees for about a half hour, checking occasionally and flipping when necessary.
Once fully cooked, place in a serving dish and top with the rest of the rosemary, parmesan, and salt & pepper to taste.
Serve with ketchup, ranch dressing, or just by themselves. (I like to serve them with skewers!)
