Peanut Butter Cups

  • 4 cups chocolate chips (I used Enjoy Life gluten/dairy/soy free mini chocolate chips)
  • 1 cup freshly ground peanut butter
  • 2 tablespoons coconut oil
  • 1 tablespoon agave
  • Muffin tin + papers

What You Do:

  1. Melt down 2 cups of chocolate chips and 1/2 tablespoon coconut oil on the stove.
  2. Divide melted chocolate into muffin tins. Freeze for 5 minutes.
  3. Mix together peanut butter, 1 tablespoon coconut oil and the agave.
  4. Divide peanut butter mixture into muffin tins, atop the now frozen chocolate.. Flatten by gently tapping the tin on the counter. Freeze for 5 minutes.
  5. Melt down the last 2 cups of chocolate chips and 1/2 tablespoon coconut oil on the stove.
  6. Divide melted chocolate into muffin tins as the last layer. Flatten and place in freezer for 10 minutes.
  7. Remove from freezer and into fridge before serving, varying on your personal taste.
