What You Need

  • 7-8 red idaho potatoes, cut into 3x3 inch chunks

  • 1 shallot, sliced thin

  • 1/2 yellow onion, sliced thin

  • 3 garlic cloves, minced

  • 2 carrots, sliced

  • 2 tablespoons oil

  • 1 teaspoon dried oregano

  • salt and pepper (to taste)

  • 5 bone in chicken thighs

  • fresh mint sprigs

  • 2 teaspoons lemon pepper

  • 1 tablespoon honey

What You Do

  1. Preheat oven to 450 degrees.

  2. Coat potatoes and carrots in oil and garlic. Top with salt, pepper, and dried oregano. Roast for about 20 minutes.

  3. Meanwhile, whisk together lemon juice, lemon pepper, honey, salt and pepper, and fresh mint leaves. Marinate chicken thighs in this mixture.

  4. Once potatoes and carrots are done, remove from oven, stir, and top with chicken thighs (along with any excess juice) and a few mint sprigs.

  5. Roast for about 45 minutes and serve.
