What You Need:
1 pound linguine, cooked & tossed in olive oil
1/2 pound peas, blanched
1/2 pound fava beans, blanched and shelled
1/2 cup parmesan cheese, shredded
1 cup plain greek yogurt
1/4 cup fresh mint leaves, chopped
1/4 cup fresh parsley, chopped
2 garlic cloves
coarse salt and fresh black pepper
What You Do:
Mix together peas and fava beans. Set aside.
In a food processor, mix together the parmesan cheese, greek yogurt, garlic, mint leaves, and parsley. Add salt and pepper to taste.
Assemble plate with linguine, pea and bean mixture, and top with sauce and salt and pepper. Serve hot or cold.
